Potato Swirls

Potato Swirls are a tasty dish, perfect for a brunch or an outdoor picnic. A flavorful way to start dinner or lunch, quick to prepare and also great for using up leftover cheese or cold cuts.

Ingredients

  • 4 potatoes
  • 1 egg
  • 8 slices salami
  • 4 slices cooked ham
  • 2 mozzarella cheeses
  • 1 teaspoon fine salt
  • 1 teaspoon black pepper (ground)
  • 1 tablespoon potato starch
  • 0.7 oz butter
  • 2 tablespoons grated Parmesan cheese

Preparation

  • Wash the potatoes, you can peel them or leave the skin on, so they will absorb less water while cooking. To speed up cooking time if they are very large, cut them into four parts.

    Boil the potatoes in plenty of salted water, then mash them with a potato masher directly onto a work surface.

    Add the egg, butter, chopped ham and salami, salt, pepper, Parmesan, and diced mozzarella.

    Mix everything and if too soft add a little starch, just to make the dough less sticky (breadcrumbs work fine too).

    Divide the dough into parts and make sticks about 10 inches long, then roll them up.

    Place everything on a baking sheet covered with parchment paper and cook for 20 minutes at 356°F

Notes

I recommend boiling the potatoes with the skin on, they will absorb less water.

To shorten the cooking time, divide the potatoes into 2 or 4 parts depending on the size.
