You can use a variety of ingredients for the potato pie, experiment with unique combinations or follow this recipe which I find quite classic. The potato, zucchini, and bacon pie is very popular in our house, feel free to try it yourself!

Ingredients
- 2 Eggs
- 10.6 oz Zucchini
- 14.1 oz Potatoes
- 1.6 cups All-purpose flour
- 1.5 cups Water (warm)
- 7.1 oz Smoked bacon (diced)
- to taste Parsley (chopped)
- to taste Fine salt
- to taste Black pepper (ground)
- to taste Olive oil
- 2 cloves Garlic
- 1 Onions
- 2 tablespoons Parmesan cheese (grated)
- to taste Butter (spray)
Preparation
Wash, clean, and slice the zucchini into rounds. Cook them in a pan with a bit of oil and garlic for about 15 minutes, adjust salt, pepper, and add parsley.
Fry the bacon in another pan.
Peel the potatoes and grate them with a coarse grater.
In a bowl, mix the eggs, adding the flour and water alternately while mixing with a whisk. Add the grated potatoes, sautéed zucchini, Parmesan, bacon, and adjust salt and pepper.
Spray butter into a 12-inch diameter baking dish and bake in a fan oven at 392°F for about 45 minutes.
Notes
I often use spray butter, I know it doesn’t compare to the block butter you find in stores, but I find it convenient, quick, and ideal for avoiding waste or excessive use. Of course, you can alternatively use a piece of block butter.
