Pound Cake with Mascarpone and Peaches

I love using mascarpone for both sweet and savory recipes. I find it flavorful and versatile! The Pound Cake with Mascarpone and Peaches is a delicious dessert that you can enjoy for breakfast or a healthy snack.

Ingredients

  • 3 Eggs
  • 3/4 cup Sugar
  • 9 oz Mascarpone
  • 1 1/2 cup All-purpose flour
  • 1/3 cup Cornstarch
  • 1 packet Baking powder
  • as needed Butter
  • 9 oz Peaches (cleaned)

Preparation

  • In a mixer with beaters, place the eggs kept at room temperature for at least fifteen minutes.

    Add the sugar and beat at full power for 5 minutes, until the mixture is frothy.

    Now, set the beaters to the lowest speed and add the mascarpone, tablespoon by tablespoon, which you should have taken out of the fridge about fifteen minutes earlier.

    Sift the flour and baking powder, gradually incorporating them into the mixture, still with the beaters on low speed.

    Take a loaf pan of dimensions 10.6×3.9 inches, butter and flour it.

    Pour the mixture of flour, eggs, and mascarpone into it. Wash, peel and slice the peaches, placing them vertically inside the batter.

    Do not push them to the bottom, but let them protrude slightly, as they will tend to sink during baking.

    Bake at 356°F for 45 minutes.

Notes

Please do not use cold eggs or mascarpone from the fridge. Take them out at least fifteen minutes before you start the recipe.
