When you have guests and don’t want to offer the usual appetizers, try the Quick Artichoke Savory Pie, very easy, tasty, and ready with few ingredients. With a surprise inside each artichoke!

Ingredients
- 5 artichokes (with a total weight of about 1.5 lbs)
- 1 lemon
- 3.5 oz sausage (sausage pearls)
- 1/4 cup béchamel sauce
- 1 puff pastry (round, weighing 8 oz)
- to taste fine salt
- to taste olive oil
- to taste grated Parmesan cheese
- to taste coarse salt
Steps
Clean the artichokes leaving a piece of stem and soak them in water with the juice and peel of a lemon.
Cut them in half. You can choose to cut the tips and remove the inner part before or after cooking them.
Boil the artichokes in plenty of salted water for about 20 minutes. They should be tender but not too much. Drain them well, trying not to damage them too much, they should remain intact.
If you haven’t done it before, cut the tips and clean the inner part.
Cover a baking pan with a diameter of 9 inches with parchment paper, place a round puff pastry on top and spread a thin layer of béchamel sauce. Sprinkle with grated Parmesan cheese on top.
Season the artichokes with a little fine salt and olive oil. Insert a bit of sausage previously browned in a pan inside each one. I used sausage pearls, and I put half a pearl for each artichoke half.
Place the artichokes inside the baking pan. Try to roll up the excess puff pastry edges and then arrange it around the artichokes like a crown. Season the surface with a bit of salt and olive oil, bake at 350°F for about 25 minutes.
