Raw zucchini rolls are truly a delicious appetizer, yet light and quick to prepare, as the vegetables are neither fried nor grilled beforehand. I assure you they are like cherries: one leads to another!

Ingredients
- 1.1 lbs Zucchini
- 5.3 oz Emmentaler
- 5.3 oz Cooked Ham
- to taste Fine salt
- 2.2 cups Breadcrumbs
- 2 tbsps Parmigiano Reggiano DOP (grated)
- to taste Fine salt
- to taste Olive oil
Preparation
Wash and clean the zucchini.
Slice them with a peeler into thin slices about 1/16 inch thick. In a plate, place the breadcrumbs, grated Parmesan, and a pinch of salt.
Coat the zucchini slices in this mixture, trying to cover them completely.
Place the slices on a surface, add a strip of ham, a strip of Emmentaler, and roll everything up, securing the roll with a toothpick.
In an aluminum tray for 8 portions, size about 12×9 inches, lined with parchment paper, place the rolls, drizzle them with a little olive oil, and bake at 356°F for 20 minutes, then switch the oven to grill mode for about 10 minutes.
