Reindeer Cookies

After the exhausting work on Christmas Eve, our reindeer can finally enjoy their well-deserved rest. They helped Santa deliver gifts to all the children and are now on vacation, which is evident from their satisfied faces. They send you warm greetings!

These Reindeer Cookies are made with a simple shortcrust pastry and filled with fig jam, but you can use any flavor you prefer, as long as the jam isn’t too watery. You can also choose not to fill the cookies with jam, decorating just the surface.

Ingredients

  • 4 cups g all-purpose flour
  • 14 tbsps g butter
  • 1 cup g sugar
  • 3 eggs
  • 14 oz g fig jam (for filling the cookies)
  • as needed colored sugar candy (soft blackberry and raspberry, for the nose)
  • food coloring (in gel, gold pencil, for the mouth)
  • as needed sugar eyes
  • as needed stick pretzels (mini pretzel shape, for the antlers)
  • as needed glucose syrup (as glue)

Steps

  • Prepare the shortcrust pastry with the indicated quantities and follow the procedure found by clicking this link.

    Place the dough (you will get about 2.3 lbs of dough) in the refrigerator for about an hour, then roll it out with a rolling pin on a floured surface. Divide it into several parts, so it will be easier to roll out. To get an even height, I recommend using two sticks (I use Chinese chopsticks), which are about 0.2 inches high.

  • Now cut out the cookies with a cookie cutter with a diameter of 3 inches. You will get about 30-32 cookies.

  • In half of the cookies, make a small circle slightly below the center. I used an apple corer, which I found to be a practical and simple method. Leave the other half as they are.

  • Place all the cookies on a baking sheet lined with parchment paper and bake at 356°F for about 12-15 minutes.

  • Once baked, let them cool. Put a generous spoonful of jam on the whole cookie; I used fig jam. You can use the flavor you like best, as long as the jam isn’t too liquid.

  • Now take the cookie with the hole, since the raspberry gummy candy needs to fit in, if it’s too small, widen it slightly with a cheese or oyster knife.

  • Now place the cookie with the hole over the jam. Proceed in this way with all remaining cookies.

  • All that’s left is to decorate the cookies: use a raspberry gummy candy for the nose, place the sugar eyes, sticking them with glucose syrup.

  • Now attach the mini pretzels as antlers, always sticking them with glucose syrup.

  • Draw the reindeer’s mouth with the colored pencil.
