Ingredients
- 7 tablespoons soy sauce
- 4 tablespoons vegetable oil
- 1.5 tablespoons sugar
- 1.5 tablespoons rice flour
- 3 tablespoons water
- 1.5 tablespoons mirin (you can substitute it with sparkling wine or dry wine)
- 1.5 lbs pork loin
- 4 cloves
- 1 pinch fennel seeds
- 2 pinches black pepper (ground)
- 1 pinch cinnamon powder
- 2 pinches fine salt
- as needed vegetable oil
- 5.3 oz savoy cabbage (cleaned)
- 3.5 oz onion
- 5.3 oz carrots
- 2 pinches ginger powder
- 14.1 oz noodles (rice)
- 3 pinches coarse salt
Preparation
Cut the pork loin into thin slices and then strips, place it in a bowl, season with cloves, pepper, cinnamon, fennel seeds, salt. Mix well to flavor the meat and let it rest for a while.
Now prepare the vegetables: wash the carrots, cabbage, and onion. Clean the carrot, remove the hard part of the cabbage, peel the onion. Now julienne the vegetables, put some vegetable oil in a wok, heat it up, and add them. Also add garlic, ginger, and stir-fry until the vegetables become soft, but not too cooked, they should be crunchy. Now remove them from the pan and put them on a plate.
Add some more oil to the wok, heat it, pour in the pork strips, and cook until they are nicely golden. Now remove them from the heat and place them on a plate.
Fill a very large pot with water, once it boils add the coarse salt and rice noodles, cook them for one or two minutes less than indicated on the package, then drain them, let them cool slightly, and dress with some vegetable oil to separate them well from each other.
Still in the wok, add a bit of oil, heat it, pour the noodles inside, and fry them for one or two minutes, they should become slightly golden.
Then add the pork, vegetables, mix the ingredients well for a few minutes. Then add the previously prepared sauce and try to flavor all the noodles well.
Serve hot.
Enjoy your meal!
