Risotto with Artichokes and Prawns is a really tasty and rich main course, an excellent combination of flavors. I used artichokes in oil, if you prefer to use fresh ones you will need to clean, slice them, put them in a pan with some oil and water and cook them until they become tender but still crisp. If you use fresh artichokes you will need seven (it also depends on the size of the artichokes you use).
You can also skip toasting the rice and put it directly in the pan with the artichokes and prawns.
If you have bought prawn tails, prepare the broth with two fish-flavored broth hearts.

Ingredients
- 10.5 oz artichokes in oil (or 7 fresh artichokes, depending on the size of the artichokes)
- 20 prawns
- 1 lb g rice
- to taste olive oil
- 2 cloves garlic
- to taste fine salt
- to taste parsley (chopped)
- 1 tbsp butter
- to taste black pepper (ground)
Preparation
Clean the prawns, removing the head and shell.
Be sure to remove the black vein.
Put about two liters (8 cups) of water in a pot, add 4/5 prawn heads, three heaping teaspoons of salt, and bring to a boil.
Boil for about 10 minutes, then remove the heads with a slotted spoon.
This will be the broth you will use for cooking the rice.
In a wok, toast the rice with two tablespoons of oil.
Heat three tablespoons of oil in a pan, add the artichokes cut into pieces.
Immediately after, add the prawns and cook for about five minutes.
Pour the dressing into the wok with the rice.
Continue cooking by adding the prepared broth with the prawn heads, as it dries up.
Sprinkle with chopped parsley and ground black pepper.
One minute before the rice is cooked, add the butter and mix everything together.
