Risotto with Sausage

I love risottos, and I enjoy preparing them by adding a variety of ingredients. This Risotto with Sausage is a classic, rich in taste and flavor.

Ingredients

  • 2 cups Rice
  • 12 oz Sausage
  • 1 onion ((about 1.8 oz))
  • 1 carrot ((about 3.5 oz))
  • to taste Olive oil
  • to taste Salt
  • 4 cups beef broth
  • 4 cups Water
  • 3.5 tbsp Butter
  • 3 tbsp Parmigiano Reggiano DOP (grated)

Preparation

  • Place a bit of oil in a large pan and toast the rice well.

    Remove it from the pan and put it on a plate.

  • Wash, clean, and dice the onion and carrot.

    Sauté them for a few minutes in a pan where you’ve added a bit of oil.

  • At this point, remove the casing from the sausage, add it to the pan with the carrot and onion, and sauté it while trying to crumble it with a wooden spoon.

  • Now add the rice you previously sautéed, and mix well.

  • In a pot, heat the boiled beef broth with water (alternatively, you can prepare the broth with a bouillon cube).

  • Add the broth little by little, incorporating two or three ladles as it dries, and continue this way until the rice is cooked.

    At the end of cooking, stir in the butter and add the Parmigiano, mix well, and serve hot.
