- Difficulty: Very easy
- Cost: Medium
- Preparation time: 30 Minutes
- Portions: 4 People
- Cooking methods: Oven
- Cuisine: Italian
- Seasonality: All seasons
Ingredients
- 3.5 lbs sea bass (4 whole sea bass about 14 oz each)
- 4.4 lbs coarse salt
- as needed olive oil
Steps
Wash and gut the sea bass.
Take a rectangular baking tray measuring 12×9 inches, cover it with parchment paper, and create a layer of coarse salt at the bottom. Place the cleaned sea bass on top.
All our sea bass fit in one tray. If you want, you can add herbs inside, but it’s entirely optional.
Now cover them well with the remaining salt. Make sure no part is exposed, otherwise they might burn.
Cook in the oven at 350°F for about an hour.
You’ll know it’s ready when you tap with a spoon and hear the crust is hard and compact.
Carefully clean the sea bass from all the salt, scooping it up with a spoon and placing it in a bowl.
All that’s left is to clean the sea bass by removing the skin, bones, and head. You can dress the sea bass with a little olive oil or enjoy it with a sauce of your choice.
