I know that saltimbocca are not made with chicken breast slices, but with veal, and that they are not made with pancetta, but allow me a digression on the theme 🙂

Ingredients
- 2.2 lbs Chicken breast (sliced)
- 5.3 oz Rolled pancetta (sliced)
- 3.5 oz Prosciutto (sliced)
- to taste Sage (leaves)
- to taste Fine salt (Persian blue)
- to taste Black pepper (ground)
Preparation
Place the chicken breast slice on a surface, season it with salt and pepper, place a slice of prosciutto on some and a slice of pancetta on others.
Finish with a sage leaf. Secure everything with a toothpick.
Heat a griddle well and cook the slices first on the prosciutto side for a few minutes, then on the other side for a few minutes more.
Serve hot
Notes
With the same procedure, you can prepare saltimbocca with veal slices.
