An unmissable appetizer on the holiday table, the Piedmontese Russian Salad, has two ingredients that differentiate it from the classic one. Originally in Russia around the mid-1800s, it was mainly composed of oysters, caviar, and shrimp, with very minimal vegetables. But later in Racconigi, these ingredients were replaced with vegetables. And the funny thing is that in Russia it is called Italian Salad, in Italy it is called Russian Salad. But now let’s prepare this truly exquisite dish.
For the Piedmontese Russian Salad, there are various versions, some do not include the hard-boiled egg, others add a bit of Piedmontese pickled vegetables for more flavor. Today we are preparing it in the shape of Santa’s Hat!

Ingredients
- 3.5 oz carrots (cleaned)
- 3.5 oz potatoes (cleaned)
- 3.5 oz green beans (frozen and blanched)
- 3.5 oz peas
- 1 tsp coarse salt
- 7 oz mayonnaise
- 2 hard-boiled eggs
- 4.2 oz tuna in oil
- 3.5 oz mayonnaise (for covering the hats)
- 1 tsp red beets, cooked, boiled (only the juice)
- 5.3 oz mayonnaise (to decorate the hats)
Steps

With this dose, you will get six Santa Hats. I used a cookie cutter with a diameter of about 2 inches to have a more regular base. Place a little Russian salad on a flat plate and shape it round with the cutter. Make it about 1 inch high.
Place another spoonful of mayonnaise on top and shape it into a cone.
Try to give it a shape that resembles Santa’s Hat.
I used cooked and frozen red beets to color the mayonnaise used for the hat coverings, I thawed them and used the juice as a coloring. If you prefer, you can also use red food coloring.
You need to get a mixture that is not too fluid, otherwise, it will run when you spread it on the Russian salad.
Carefully spread the colored mayonnaise on the Russian salad cone with a teaspoon.
With a syringe, make small tufts of mayonnaise all around the cylinder.
Put another tuft of mayonnaise on the tip and your Santa Hats are ready!

Tips, advice
