Sausage Nuggets with Onions and Confit Cherry Tomatoes

These Sausage Nuggets with Onions and Confit Cherry Tomatoes are a dish that combines various flavors: the salty taste of sausage, the pleasantly tangy taste of balsamic vinegar, and the sweet and sour taste of cherry tomatoes. A flavor explosion to try for those who love unusual combinations!

Ingredients

  • 14 oz pork sausage
  • 10 cherry tomatoes
  • 2 onions
  • 2 teaspoons sugar
  • 2 pinches fine salt
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil

Preparation

  • Remove the skin from the sausage and make small balls with the sausage meat. Wash the cherry tomatoes, cut them into 4 parts. Clean and slice the onion.

    In a pan with a tablespoon of olive oil, add the cherry tomatoes, a pinch of salt, sugar, and sauté for a few minutes.

    Then add the onion, add balsamic vinegar, and cook until they turn golden.

    In another non-stick pan, simply brown the sausage nuggets for a few minutes, adding a bit of oil if necessary. Since they are very small, a long cooking time is not needed. Serve hot with the previously prepared onion and cherry tomato side dish.

Tips/Advice

Usually, “confit” tomatoes, a term derived from the French verb “confire” (to preserve), require very slow cooking in the oven or on low heat with sugar and/or vinegar seasoning. In this recipe, I opted for a quick pan cooking to reduce preparation time. If you prefer, you can proceed with the classic cooking method.
