The sautéed pea pods are truly amazing, a recycling recipe that you absolutely must not miss. I recommend using organic peas, therefore untreated, I used those from my uncle’s garden, sweet, tender, and tasty. Considering that the pods make up about 70% of the total weight of this legume, recycling them reduces waste to almost zero! To obtain about 2 lbs of cooked pods, you will need about 4 lbs of peas to shell, keeping in mind that they will lose a bit of water during cooking.
Here are some recipes with peas to make the most of the legume’s interior:
- Difficulty: Easy
- Cost: Economical
- Preparation time: 1 Hour
- Portions: 6 People
- Cooking methods: Stovetop
- Cuisine: Italian
- Seasonality: Spring, Summer
Ingredients
- 2.2 1.1 lbs pea pods (cleaned about)
- 6 cloves garlic
- 2 cups water
- to taste chili pepper (optional)
Steps
For those who are not lucky enough to have an uncle with a well-stocked garden, I recommend buying peas from farmers’ markets, so the pods will be pesticide-free and therefore untreated.
First, shell the peas, which you can use for other preparations. You can find ideas both at the beginning and end of the recipe.
Now you need to remove the inner part of the pod, which is rather tough. You can start by slightly bending the tip of the pod and pulling it towards you.
Try to be gentle and do not pull too quickly, or it may break.
Now remove the remaining strings.
Once you have finished this task, which is rather long and a bit tedious, wash the cleaned pods under running water. Let them drain.
In a pan, add a little oil, the garlic cloves, and the pea pods.
Salt, pour in two cups of water, cover, and cook for about 20 minutes.
When they are soft but not fully cooked, remove the lid and let the remaining water evaporate. Enjoy your meal!
Suggestions, Tips
If you can’t consume all the pea pods, I suggest blanching and freezing them to enjoy later.
