Ingredients
- 1 puff pastry (rectangular weighing approx. 9.35 oz)
- 5.3 oz sliced speck
- 1.3 lbs potatoes (to be peeled)
- 2 tsps coarse salt (in the potato cooking water)
- to taste fine salt (to season the potatoes)
- to taste olive oil (to season the potatoes)
- to taste black pepper (ground to season the potatoes)
- to taste dried oregano (to season the potatoes)
- 8.8 oz smoked provola (in slices)
Steps
Wash, peel, and boil the potatoes in a pot with salted water. They should be soft but not fall apart, which will take about 20 minutes. Let them cool slightly and then cut them into not-too-thick slices.
Place the parchment paper on a rectangular baking tray measuring approx. 12×9 inches, place the puff pastry on top and prick it with a fork.
Place the slices of speck on top of the pastry.
Now place the slices of boiled potatoes on top.
Season with fine salt, olive oil, oregano, and ground black pepper.
Cover everything with the slices of smoked provola.
Bake at 356°F for about 20 minutes.
