Do you have cold cuts, cheeses, and puff pastry in the fridge? Here is the recipe for you, a savory pie with spinach, cooked ham, and Emmental. Of course, you can also use other cold cuts and types of cheese, as long as they are not too watery.

Ingredients
- 25 oz spinach, frozen (blanched)
- 1 cup onion
- 2 tbsp butter
- 1/3 cup grated Parmesan cheese
- to taste fine salt
- 6 eggs
- 3.4 oz milk
- 1/3 cup grated Parmesan cheese
- 1 puff pastry (rectangular, 9.7 oz)
- 5.3 oz cooked ham
- 7 oz Emmental
- 1/3 cup grated Parmesan cheese (for the top of the pie)
Steps
Start by preparing the spinach. Defrost them in the microwave for a few seconds and chop them into smaller pieces on a cutting board. Clean and finely chop the onion.
In a pan, melt the butter, add the spinach and onion. Cook for a few minutes, stirring occasionally. Now add the Parmesan, salt and let it flavor a bit longer. Let cool.
In a bowl, place the eggs (I put 5 first and then added the last one with the spinach, but you can also put all six together), the grated Parmesan cheese, the milk, and beat well with a whisk.
Now add the spinach, wait for them to be warm, otherwise they will cook the eggs.
Add the last egg if you haven’t added it earlier, and mix well until the ingredients are combined.
Cover a baking tray of dimensions 12×9 inches with parchment paper, and place the puff pastry on top. Pour the spinach mixture inside.
Try to level it, sprinkle with Parmesan, and bake at 350°F for about 35/40 minutes.
