Ingredients

  • 2.2 lbs rabbit (in pieces)
  • 30 green olives
  • 4 artichokes (in oil)
  • 2 carrots
  • 1 onion (small)
  • 1 bouillon cube
  • 4 leaves sage
  • 1 sprig rosemary
  • 10 capers
  • 4 tbsps olive oil
  • to taste fine salt (if necessary)

Preparation

  • Brown the rabbit pieces in a large pot with the chopped carrots and onion for about 10 minutes.

    Add the capers, halved olives, chopped artichokes, sage, and rosemary.

    Cover the rabbit halfway with water and add the bouillon cube. Cook for about 1 hour with the lid on the pot. Towards the end of cooking, taste and if necessary, add a bit of salt, considering the ingredients are quite flavorful, the meat is often already salty enough. If the rabbit is too watery, remove the lid and let it dry slightly. Serve hot.

Tips/Advice

The rabbit is well cooked when the meat easily comes off the bone. Check with a fork, cooking times may vary depending on the tenderness of the meat.
