Shredded Chicken with Corn and Tomatoes is a quick recipe ready in a few minutes with few ingredients, ideal for a summer dinner or lunch. A way of cooking chicken that I find very fresh and colorful! During the cooking of the chicken, I used a spice mix that gives it an exotic taste that I personally love.

Ingredients
- 2.2 lbs chicken breast (sliced)
- 10.6 oz corn
- 4 San Marzano tomatoes
- 5.3 oz fresh cream cheese
- to taste fine salt
- to taste olive oil
- 1 tsp spices (for tacos and burritos)
Preparation
Cook the chicken breast on a grill, seasoning it with the taco and burritos spices, and salt on both sides.
Once cooled, shred it and place it in a bowl.
Add the corn, diced tomatoes seasoned with a little salt and oil, and the cream cheese.
Mix well and adjust the salt and oil.
Suggestions/Tips
The spice mix for Tacos and Burritos is easily found in supermarkets. If you don’t have it at home or can’t find it in the store, you can make your own spice mix at home. Obviously, the versions can be very imaginative; here is a recommended one you can prepare with: 1 part chili powder, 1 part ground cumin, 1/2 part smoked paprika, 1 part coriander, 1/2 part white pepper, 1 part salt.
