Ingredients
- 3 1/4 cups all-purpose flour
- 1 1/4 cups milk kefir (plain)
- 1 tsp baking soda
- 1 tsp fine salt
- 9 oz ham (for the filling)
- 9 oz pizza mozzarella (block for the filling)
- as needed olive oil (to grease the pan)
Steps
Put the flour on a work surface creating a cavity in the center, add the fine salt and the baking soda.
Now pour the kefir into the flour well and start kneading.
You should get a soft dough, but not sticky. Now let it rest covered with a container for about 15 minutes.
After the time has passed, divide the dough into two equal parts.
Place a sheet of parchment paper on the bottom of the pan and try to press its shape. I used a 12-inch diameter pan.
Place the parchment paper on a work surface, sprinkle with a little flour, and roll out the first ball to the size of the pressed circle.
Fill with ham and cheese; I used cooked ham and pizza mozzarella, but you can choose the cold cuts and cheese you prefer, as long as they are not too watery.
Roll out the other dough ball and place it on top of the previously filled one.
Seal the edges well.
Lightly grease the bottom of the pan with a little oil and place the focaccia inside.
Cook over medium-low heat for about 10-15 minutes per side, flipping the focaccia until golden. Serve hot.
