And here again is one of my favorite dishes: the pie. This time I offer you a Spinach and Provola Pie, wrapped in flaky puff pastry.

Ingredients
- 1 puff pastry (round, 8 oz (approx. 230 g))
- 24.7 oz spinach, cooked, boiled (frozen)
- 10.6 oz smoked bacon (diced)
- 3 eggs
- 5.3 oz smoked provola cheese
- to taste Fine salt
- 1 onion (3.5 oz (approx. 100 g))
- to taste Butter
Preparation
In a skillet, sauté the diced bacon.
Meanwhile, peel and chop the onion into small pieces.
Cut the cheese into rather small cubes.
Once the bacon is cooked, remove it from the skillet and place it in a container, leaving the residual oil.
In the same skillet, add butter, sauté the onion, and then add the spinach (if necessary, chop it slightly).
Continue cooking for about 10 minutes, adjusting the salt at the end and stirring occasionally.
In a container, mix the slightly cooled spinach with the bacon.
Line a 11-inch (approx. 28 cm) diameter baking dish with parchment paper, place the puff pastry on top, and then the spinach mixture.
Beat the eggs with three pinches of salt in a container and then pour them evenly over the spinach in the pan.
Sprinkle the surface with the diced cheese.
Bake at 356°F (180°C) with a fan oven for 30 minutes.
At the end of cooking, brown the surface.
Tips/Advice
You can also use another type of cheese, as long as it is not too watery (such as Emmental). You can also grate it instead of dicing it.
If you use fresh spinach, you will need about twice as much. Clean them well and boil them in plenty of salted water until they are tender. Drain them well in a colander.
If you prefer a finer mixture, you can blend the spinach in a food processor.
