These Spinach Omelette Ghosts (Halloween) are a delicious and quick appetizer to prepare for this holiday, simple yet very tasty. A cute idea especially for kids to get them to eat vegetables.

Ingredients
- 6 Eggs
- 10 cups Spinach (fresh)
- 4 pinches Fine salt
- 3 tbsps Parmigiano Reggiano DOP (grated)
- to taste Black pepper (ground)
- 3.5 oz Emmentaler (sliced)
- 2.8 oz Cooked ham (sliced)
- 4 Black olives
- to taste Mayonnaise
Preparation
Wash and thoroughly clean the spinach. Put them in a mixer, add the eggs, parmesan, salt, and pepper, and mix until the mixture is smooth.
Lay parchment paper on a 12×15 inch baking sheet, place the mixture inside, level it well, and bake at 392°F for 15 minutes in a static oven or at 356°F for 15 minutes in a fan oven.
Once cooked, cut it in half, place a layer of cheese (slices or grated) on half of the omelette and then a layer of ham.
Now place the other half of the omelette over the side covered with ham and cheese.
Cut a ghost shape out of parchment paper, ensuring you can fit 4 ghosts on the half omelette.
Lay it over the omelette and cut the ghost shape by following the outline with a knife. Do the same for the other ghosts.Use half an olive for the eyes, securing them with a bit of mayonnaise. For the mouth, use a small piece of olive or a bit of mayonnaise if you prefer.
Suggestions/Advice
You can also use another type of cheese, as long as it is not too watery. You can also grate it instead of using slices.
