Ingredients
- 28 oz Beef (stew)
- 14 oz Potatoes
- 2 Carrots
- 1 Onions
- 2 Celery (stalks)
- 1 tsp Thyme (dried)
- 1 tsp Curry
- 1 tsp Bay leaf (dried)

- 1 tbsp Olive oil
- 2 Puff Pastry
- 1 Egg
Preparation
Prepare the vegetables for the sauté: chop the carrots, slice the onion, and cut the celery.
Sauté the vegetables in a pan with a little oil, season with salt, then remove them from the pan.
Sauté the beef in a little oil, season with salt.
Now add the previously sautéed vegetables, peeled and chopped potatoes, and cook for about 10 minutes.
In a baking dish with a 12-inch diameter, place the puff pastry with parchment paper underneath, fill it with the mixture and cover with another layer of puff pastry.
Make a hole in the center to let the steam escape and decorate as desired with pieces of puff pastry.
Brush with a beaten egg and bake at 356°F for 40 minutes.
Notes
The cuts to use are those with a bit of fat, which will make your stew more tender and juicy, such as the shoulder (chuck, clod, round), the neck (chuck or rib), or the belly of the beef.
