Streamer Tart

Shall we throw streamers for Carnival? Yes, but on a splendid tart, filled with delicious plum jam. For the Streamer Tart, I chose two colors that, in my opinion, go well together, but you can decorate it as you prefer.

Leave the base a bit thicker so it remains slightly softer and cuts more easily.

You can choose the jam flavor you prefer, the important thing is that it is not too liquid.

Do not set the oven temperature too high, otherwise, you risk the jam leaking out.

Ingredients

  • 4 cups all-purpose flour
  • 1 cup sugar
  • 14 tbsps butter
  • 3 eggs
  • 1 bean vanilla
  • as needed red food coloring (in gel)
  • as needed food coloring (blue in gel)
  • 2.5 cups plum jam

  • For the preparation of the shortcrust pastry, you can find the recipe here.

    For convenience, I leave you the procedure. Place the flour in a mound on a board, make a hole in the center, add the vanilla bean seeds, eggs, sugar, softened butter, and start kneading, without overworking the ingredients, until the dough is smooth and no longer sticky. Wrap the dough in plastic wrap and let it rest in the fridge for about half an hour.

  • Remove the shortcrust pastry from the fridge, divide it into two parts, one weighing about 21 oz and the other about 16 oz.

  • Divide the 16 oz dough into 4 equal parts. Leave two in the original color, add blue food coloring to one. I used gel, you’ll get a nice green.

  • Add red gel food coloring to the other. The intensity will depend on the amount of coloring you use.

  • Flour the work surface, roll the yellow dough out with a rolling pin until obtaining a rectangle of approximately 8×10 inches. Do the same with the red dough. Place it on top of the yellow one and roll again with the rolling pin to make the two layers adhere well.

  • Roll it up lengthwise, wrap it in plastic wrap, and put it in the fridge for at least half an hour.

  • Do the same with the other yellow dough and the green one.

  • Remove both cylinders from the fridge and cut slices about 1/4 inch thick with a sharp knife.

  • Flour the work surface, roll out the 21 oz dough with the rolling pin. Butter and flour a springform pan with a diameter of 10 inches or line it with parchment paper.

  • Cover it with the shortcrust pastry, trim the edge so that it’s all the same height.

  • Cover the tart base with jam, fold the edges inward, and then start covering with the streamers. I alternated the colors, but you can choose how to arrange them.

  • Try to overlap them slightly, so as not to leave empty spaces.

  • Bake at 340°F for about 45 minutes. Do not set the temperature too high, or you risk making the jam leak out and over-coloring the surface.
