Few ingredients, no waiting for rising time, and you only dirty one pan, without turning on the oven. So if you’re in a hurry, save the recipe and try it! For the filling, you can choose the cold cuts and cheese you prefer, as long as they are not too watery, otherwise they might release liquids during cooking. For convenience, I used a frittata pan, so it’s easier to turn your flatbread without too much effort and risk of dropping it!

Ingredients
- 3 1/2 cups all-purpose flour
- 1 1/4 cups milk kefir (plain)
- 1 tsp baking soda
- 1 tsp fine salt
- 1/2 lb cooked ham (for the filling)
- 1/2 lb mozzarella for pizza (block for the filling)
- as needed olive oil (to grease the pan)
Steps
Place the flour on a work surface creating a well in the center, add the fine salt and baking soda.
Now pour the kefir into the flour well and start kneading.
You need to obtain a soft dough, but not sticky. Now let it rest covered with a container for about 15 minutes.
After the time has passed, divide the dough into two equal parts.
Place a sheet of parchment paper at the bottom of the pan and try to imprint its shape. I used a pan with a 12-inch diameter.
Place the parchment paper on a work surface, sprinkle with a little flour, and roll out the first ball with a rolling pin until it reaches the size of the imprinted circle.
Fill with ham and cheese; I used cooked ham and mozzarella for pizza, but you can choose the cold cuts and cheeses you prefer, as long as they are not too watery.
Roll out the other dough and place it over the previously filled one.
Seal the edges well.
Lightly grease the bottom of the pan with a little oil and place the flatbread inside.
Cook over medium-low heat for about 10-15 minutes per side, flipping the flatbread until golden brown. Serve hot.
