Ingredients
- 3 1/4 cups all-purpose flour
- 1 1/4 cups milk kefir (plain)
- 1 tsp baking soda
- 1 tsp fine salt
- 9 oz cooked ham (for the filling)
- 9 oz mozzarella for pizza (block for the filling)
- as needed olive oil (to grease the pan)
Steps
Place the flour on a work surface creating a well in the center, add the fine salt and baking soda.
Now pour the kefir into the flour well and start kneading.
You should obtain a soft dough, but not sticky. Now let it rest, covered with a container, for about 15 minutes.
After the time has passed, divide the dough into two equal parts.
Place a sheet of parchment paper on the bottom of the pan and try to imprint its shape. I used a 12-inch diameter pan.
Place the parchment paper on a work surface, sprinkle a little flour on top, and roll out the first dough ball until you get the size of the imprinted circle.
Fill with ham and cheese, I used cooked ham and mozzarella for pizza, but you can choose the cold cuts and cheeses you prefer, just make sure they are not too watery.
Also roll out the other dough ball and place it over the previously filled one.
Seal the edges well.
Lightly grease the bottom of the pan with a little oil and place the focaccia inside.
Cook over medium-low heat for about 10-15 minutes on each side, turning the focaccia until golden brown. Serve hot.
