The cheesiest dish you’ll see today? Here it is! Super cheesy baked cauliflower with parmesan and mozzarella, baked in the oven and then grilled on top. And they’re also without béchamel sauce!

Ingredients
- 1 lb cauliflower (blanched)
- 2 tbsp grated parmesan
- 2 mozzarella (about 4.4 oz each)
- to taste fine salt
- to taste olive oil
Steps
Grease a 10-inch diameter baking dish with a little olive oil, place the blanched cauliflower pieces that are not too large, and if needed, lightly salt the surface. If you want, you can also freeze the previously blanched cauliflower so they are ready to use, I have written some steps in the notes if you want to do it yourself.
Sprinkle generously with grated parmesan.
Cut two mozzarella into cubes and cover the entire surface well.
Bake at 350°F for about 15 minutes. Turn on the grill for the last 5 minutes to brown them. Make sure they don’t burn! Enjoy them piping hot.

I used Brimi mozzarella bought at Bennet, which melts well and is very cheesy.
How to freeze cauliflower: wash them, cut them into not too large pieces, put some water in a pot, when boiling add two pinches of coarse salt and the cauliflower. It will take five or ten minutes of cooking, they should be cooked but still firm. Drain them well, wait for them to cool, and put them in freezer bags, so they will be ready for use when needed.
