The cheesiest dish you’ll see today? Here it is! Super cheesy gratinated cauliflower with parmesan and mozzarella, baked and then gratinated on the surface with the grill. And they are also without béchamel!

Ingredients

  • 1 lb cauliflower (blanched)
  • 2 tbsps grated parmesan
  • 2 mozzarella (each 125g)
  • to taste fine salt
  • to taste olive oil

Steps

  • Grease a 10-inch diameter baking dish with a little olive oil, add the blanched cauliflower in not too large pieces. If needed, lightly salt the surface. You can also freeze the previously blanched cauliflower so it is ready to use; I’ve written some steps if you want to do it yourself in the notes.

  • Sprinkle with plenty of grated parmesan cheese.

  • Dice the two mozzarella and cover the entire surface well.

  • Bake at 356°F for about 15 minutes. For the last 5 minutes, turn on the grill to make them golden. Make sure they don’t burn! Enjoy them hot.

Tips and Advice

I used Brimi mozzarella bought at Bennet, which melts well and is very stringy.

How to freeze cauliflower: wash them, cut them into not too large pieces, put some water in a pot, add two pinches of coarse salt and the cauliflower once it boils. It will take five or ten minutes of cooking; they should be cooked but still firm. Drain them well, let them cool and put them in freezer bags, so they are ready to use when needed.
