Today I present to you a Tart with Peach Halves and Almonds, placed on a crispy puff pastry. A real delight, very simple to prepare, light, and flavorful. The best way to savor peaches when you have them in abundance and can’t use them all or when you want a treat to pamper yourself. Accompanied by a scoop of ice cream it will be even more delicious. To make it suitable for celiacs, just use gluten-free puff pastry and sprinkle the pan with gluten-free flour. If you prefer, you can replace the puff pastry base with a shortcrust pastry base.

Ingredients
- 1 puff pastry (230 grams round, gluten-free for the celiac version)
- 12 peaches (about 70 grams each)
- 3 eggs
- 100 g mascarpone
- 60 g brown sugar
- 50 g butter
- 200 g almonds
- 1/3 cup milk
- 1 tsp vanilla extract
- as needed butter (for greasing the pan)
- as needed flour (for dusting the pan, gluten-free for the celiac version)
- as needed powdered sugar (optional)
Steps
Lightly butter and flour (with gluten-free flour for the celiac version) a 10-inch diameter pan. I used one with a springform, so it’s easier to remove the cake.
Place the puff pastry upside down on the pan.
Line the pan with the puff pastry, use gluten-free for the celiac version, and gently remove the parchment paper. Try to have it stick to the sides and level it.
Now wash the peaches, peel them, cut them in half, remove the pit, and arrange them in the pan pit side down, trying to form concentric circles.
In a bowl, combine the eggs, sugar, mascarpone, and butter previously melted in the microwave in a glass.
Beat the ingredients well with a whisk.
Place the almonds in a mixer.
Run it until they are ground into flour. You can also leave them a bit coarse, it will give a crunchy effect to your cake. Now add them to the egg mixture.
Mix the ingredients, add the milk and vanilla extract, and with a whisk, blend everything well.
Pour the mixture over the peaches in the pan.
Bake at 356°F for about 30 minutes.
If you like, sprinkle with powdered sugar. To make it more indulgent, you can pair it with a scoop of ice cream, it will be irresistible!
