The Red Roses of the Desert

The Red Roses of the Desert are truly wonderful cookies, both in taste and appearance. I know they’re made with almond flour, but allow me a digression here. I love hazelnuts, and I can guarantee that you won’t be able to stop eating them!

Ingredients

  • 1.8 oz Whole peeled hazelnuts
  • 0.5 cup All-purpose flour
  • 5.6 tbsp Butter
  • 1 Egg
  • 0.4 cup Sugar
  • 1.4 cups Corn flakes
  • 0.4 cup Powdered sugar
  • 1.8 cups Corn flakes
  • 3 tbsp Water
  • 2 tsp Red food coloring

Preparation

  • Remove the shell from the hazelnuts with a nutcracker, put them in a mixer, and chop them until they become like flour.

    Put the corn flakes in the mixer, chop them until they become very fine.

    Now place the butter, which has been left out of the fridge for at least half an hour and cut into small pieces, in the bowl of a stand mixer with the whisks along with the sugar. Beat until the ingredients are well combined.

    Add the flour, chopped hazelnuts, egg, chopped corn flakes, and mix well.

    The dough will be slightly soft.

    Prepare the colored corn flakes (for the recipe, click on the link). With your hands, form the cookies (to prevent the dough from sticking, lightly flour your hands) and roll them in the colored corn flakes, trying to get them to adhere to the surface.

    You will get 16 cookies weighing about 18 grams each.

    Place the cookies on a baking sheet lined with parchment paper and bake at 356°F for 15 minutes.

Tips/Advice

With these amounts, you will get about 16 cookies, each weighing about 18 grams. They are small cookies, but if you prefer, you can also make them larger.

Cover all the cookies with corn flakes, but focus more on the top (obviously for aesthetic reasons).

The cookies will tend to spread during baking due to the butter: keep some colored corn flakes aside to add to the uncovered parts while they are baking. Be very careful not to burn yourself!

Check the cookies very well at the end of baking because the sugar on the corn flakes may tend to burn.

If you want more diet-friendly cookies, you can reduce the amount of butter to 60 grams and the sugar also to 60 grams.
