Tomini in Green Sauce

Tomini in Green Sauce is a delicious and very easy Piedmontese recipe to prepare. It takes just a few ingredients and minutes to create a super tasty appetizer. Ingredients

  • 1 3/4 oz parsley
  • 1 clove garlic (small)
  • 1 1/2 oz stale bread
  • 1 tbsp white wine vinegar (scant tablespoon)
  • 8 fillets anchovies in oil (small)
  • 8 tbsp olive oil
  • 2 tbsp anchovy oil
  • 11 1/2 oz tomini (fresh)

Steps

  • Wash and clean the parsley; you can use only the leaves or also the stems, although these are a bit tougher unless you have a rather powerful food processor. The green sauce can be made by chopping the ingredients by hand, or, to speed up, you can use the mixer as I did.

  • Add the garlic, anchovies, bread slightly soaked with vinegar, and start the mixer, pouring the oil little by little.

  • Depending on your taste, you can add more or less oil, as well as garlic, vinegar, and anchovies.

  • Now cut the tomino into pieces about half an inch thick; you will get six or seven pieces.

  • Season the tomini with the green sauce and enjoy your meal!

Tips, Advice

You can add more or less oil according to your taste, the same goes for anchovies, vinegar, and garlic.
