Here are some recipes accompanied by a delicious sauce, you have plenty of choices:

  • Difficulty: Easy
  • Cost: Economical
  • Preparation time: 20 Minutes
  • Portions: 7 Pieces
  • Cooking methods: No cooking
  • Cuisine: Regional Italian
  • Region: Piedmont
  • Seasonality: Spring, Summer

Ingredients

  • 1.75 oz parsley
  • 1 clove garlic (small)
  • 1.4 oz stale bread
  • 1 tbsp white wine vinegar (scant tablespoon)
  • 8 fillets anchovies in oil (small)
  • 8 tbsp olive oil
  • 2 tbsp anchovy oil
  • 11.6 oz tomini (fresh)

Steps

  • Wash and clean the parsley, you can use only the leaves or even the stems, although they are a bit tougher unless you have a rather powerful kitchen robot. You can make the green sauce by chopping the ingredients by hand, or, to speed things up, you can use the mixer as I did.

  • Add the garlic, anchovies, bread slightly soaked with vinegar, and operate the mixer, pouring the oil little by little.

  • Depending on your taste, you can add more or less oil, as well as garlic, vinegar, and anchovies.

  • Now cut the tomino into pieces about an inch high; you’ll get six or seven pieces.

  • Season the tomini with the green sauce and enjoy!

  • Enjoy the Tomini with Green Sauce with grissini rubatà, you can find the recipe here.

Tips, Advice

You can add more or less oil depending on your taste, the same goes for the anchovies, vinegar, and garlic.

If you have leftover green sauce, you can enjoy it simply on toasted bread or with breadsticks.
