Uncle Giuseppe’s Star Omelette is one of my daughter’s favorite dishes, so it can’t be missed on my blog. It’s a simple dish, but really very tasty, try it and let me know if you liked it.
The bitter herb, whose scientific name is Tanacetum balsamita, perhaps better known as Herb of St. Peter, has slightly elongated and wide leaves, with serrated edges, a faint mint/lemon scent, and a slightly bitter taste. In this omelette I’ve used only two leaves, but if you like its flavor, you can add a few more, without overdoing it, otherwise it might be too bitter.

Ingredients
- 1.75 oz egg stars
- 2 leaves aromatic herb (bitter herb or Herb of St. Peter)
- 6 eggs
- 1 tbsp breadcrumbs (level)
- 4 oz spinach, cooked, boiled
- 2 slices cooked ham
- 1 tbsp grated Parmesan cheese
- 3 pinches fine salt
Preparation
Cook the pasta with a bouillon cube in about half a liter of water.
Let it cool so that it absorbs all the remaining water.
Chop the previously boiled spinach together with the ham and the bitter herb in a mixer.
In a bowl, beat the eggs, add the cooled pasta, the chopped spinach with ham and bitter herb, the Parmesan cheese, the salt, the breadcrumbs and mix the ingredients well.
Put a little oil in a pan, put the mixture inside and fry on both sides over medium heat with the lid on.
