Uncle Giuseppe’s Star Omelette is one of my daughter’s favorite dishes, so it cannot be missing from my blog. It’s a simple yet very tasty dish, try it and tell me if you liked it.
Bitter herb, whose scientific name is Tanacetum balsamita, perhaps better known as Herb of Saint Peter, has slightly elongated and wide leaves, with serrated edges, a faint mint/lemon scent and a slightly bitter taste. In this omelette, I used only two leaves, but if you like its flavor, you can add a few more, being careful not to overdo it, or it might become too bitter.

Ingredients
- 1.8 oz egg star pasta
- 2 leaves aromatic herb (bitter herb or Herb of Saint Peter)
- 6 eggs
- 1 tbsp breadcrumbs (level)
- 4.2 oz spinach, cooked, boiled
- 2 slices cooked ham
- 1 tbsp grated parmesan cheese
- 3 pinches fine salt
Preparation
Cook the pasta with a bouillon cube in about half a liter of water.
Let it cool so it absorbs all the remaining water.
Chop the previously boiled spinach with the ham and bitter herb in a mixer.
In a bowl, beat the eggs, add the cooled pasta, the chopped spinach with ham and bitter herb, parmesan, salt, breadcrumbs, and mix the ingredients well.
Put some oil in a pan, place the mixture inside and fry on both sides over medium heat with the lid on.
