Vegan Cabbage Rolls Stuffed with Potatoes and Vegetables

By popular request, I prepared this recipe for Vegan Cabbage Rolls Stuffed with Potatoes and Vegetables to satisfy those who prefer not to eat meat. I must say that I found them really excellent, regarding the spices you can vary the quantities, taste the filling, and modify it according to your preferences. You can also omit some if they are not to your liking or add others you adore.

Ingredients

  • 1 lb savoy cabbage (clean leaves, a small cabbage)
  • 1 pinch coarse salt
  • 1 cup carrots (peeled)
  • 1/3 cup onions
  • 1/4 cup celery (cleaned)
  • 1 lb potatoes (to be peeled)
  • 2 pinches black pepper (ground)
  • 2 pinches paprika
  • 2 pinches garlic powder
  • 2 pinches dried onion
  • 2 pinches nutmeg
  • 2 pinches fine salt
  • to taste olive oil

Steps

  • As the first step, clean the cabbages, remove the hard part of the core, separate the leaves, and wash them.
    Fill a pot about halfway with water, once it boils, add a pinch of salt and the cabbage leaves. Cook for about 5-10 minutes, until they are soft but not too much.

  • Let them drain in a colander to remove excess water. You can lay them on the sides of the colander. Set aside the smaller leaves along with the cabbage heart.

  • In a pot, fill halfway with water, once it boils, add the coarse salt and the potatoes that have been washed and halved. Cook them for about 15 minutes, until they are soft. Drain them, remove the peel, and place them in a bowl. Mash them with a fork until they become a coarse puree.

  • Flavor with nutmeg and mix everything well.

  • Wash and clean the carrots, onions, and celery. Put them in a blender and chop them roughly. Add the smaller parts of the cabbage and chop everything.

  • Heat a little oil in a pan, add the vegetables, and cook them.

  • Add the vegetables to the bowl with the mashed potatoes and season with spices to your liking. Adjust salt and drizzle with a little oil. Mix everything well to blend all the ingredients.

  • Take a cabbage leaf and fill it with a generous spoonful of filling.

  • Roll the leaf, close it on the sides, and your roll is ready. Continue this way until all the leaves and filling are used.

  • I made 13 rolls, but I made them quite large.

  • Place the rolls on a baking tray lined with parchment paper, drizzle with a little oil, and cook for about 35 minutes. For the last 10 minutes, use the fan setting to make them golden on the surface. Always check to prevent burning.
