Vegetarian Cubes with Soy Sauce is an ideal recipe to make vegetables enjoyable even for those who don’t particularly love them. The sauce gives an original and special touch to the recipe, although you could eat it plain. You can also decide to vary the vegetables, but I found this combination of peas and carrots really perfect. I used a tool I had at home to slice the carrots into strips, have you ever seen it? It’s manual, but really effective.

Ingredients
- 14 oz carrots (already cleaned)
- 7 oz frozen peas
- 1 pinch coarse salt (for the peas' water)
- 2 oz onion (chopped)
- 8 eggs
- 1 tablespoon vegetable oil
- 2 pinches fine salt
- 1 teaspoon potato starch
- 1 pinch black pepper (ground)
- 2 tablespoons vegetable oil
- 4 tablespoons soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon dried onion
- 1 pinch chili powder
Steps
Fill a saucepan with about half water, once it boils add a bit of coarse salt and the frozen peas. Cook for about 10-15 minutes, until they become soft. Drain them using a slotted spoon and place them in a bowl.
Meanwhile, wash and clean the carrots. Slice them into thin matchsticks, I used an old slicer I had at home, but you can easily do it with a knife.
With this type of slicer, you will get rather thin slices.
In a bowl, place the eggs and add the carrots.
Add the previously boiled peas.
Now add pepper, salt, oil, and starch and mix.
Mix well, pour into a pan of dimensions 12×9 inches that you have lightly oiled beforehand. Level it out and bake at 356°F for about 20-25 minutes.
Remove from the oven and cut into cubes of about 1 inch on each side.
In a bowl, place all the ingredients, mix them well with a fork, so that they combine completely.
Now dip your cubes into the sauce and enjoy!
