Water Gnocchi

If you don’t know them, let me introduce you to Water Gnocchi, soft and tender, and I guarantee that once you try them, you won’t let them go! They are made with only two ingredients and are super simple and quick, what more could you want. If you love them, I leave you some other Gnocchi recipes:

Ingredients

  • 18.5 cups water
  • 4 cups all-purpose flour
  • 2 pinches fine salt
  • 1 tbsp olive oil

Instructions

  • Put the water in a large pot, add the salt, the oil, and bring to a boil. As soon as it boils, turn off the heat and pour in all the flour at once.

  • Stir with a wooden spoon.

  • Transfer the mixture to a lightly floured work surface. Start kneading quickly, being very careful not to burn your hands.

  • Knead the dough for a few minutes until you obtain a smooth, elastic, dry, and slightly soft ball. Wrap it in cling film to prevent it from drying out.

  • Divide the ball into pieces.

  • Now form ropes about the width of a finger. Use a knife to cut little pieces about 1.2 inches long.

  • You can keep the gnocchi plain, or decide to roll them on a grater (or use a fork or a gnocchi board).

  • Place them on a tray or a floured surface. They are now ready to be frozen or cooked and seasoned as you prefer, with pesto, meat sauce, cheese, butter and Parmesan, get creative!

Suggestions, Tips

Be careful not to burn your hands when kneading the mixture after removing it from the pot.
