In this article What is it and How to Make it: Gomasio, I talk about a condiment that I have recently discovered, used mainly in Japanese oriental cuisine, which I personally adore.

Ingredients
- 10 tablespoons sesame seeds
- 1 tablespoon coarse sea salt (whole)
Preparation
It is a mix of whole sea salt and toasted and ground sesame seeds, which appears as a grainy brown powder to be used in dishes instead of salt, especially ideal for those with hypertension.
Sesame seeds are rich in minerals, for example, 100 g of sesame seeds contains 975 mg of calcium and 629 mg of phosphorus. Note, however, that they are very high in calories: 100 g has a whopping 573 kcal!
It’s a product mainly suggested for cereal-based dishes, but it can also be used to flavor cooked vegetables, white meats, baked fish, salads, plain rice. You can even prepare it at home.
The proportions between sesame seeds and sea salt can vary greatly: from 6 parts sesame seeds to 1 part salt, to 30 parts sesame seeds to 1 part salt.
Ingredients:
10 tablespoons of sesame seeds
1 tablespoon of coarse whole sea salt
Place the sesame seeds in a sieve and rinse them under running water.
Let them dry. Spread the sesame seeds evenly on a baking sheet lined with parchment paper and toast at 212°F for about 15 minutes, being careful not to burn the sesame as it would become bitter and toxic (reaction due to the release of sesamol). Let cool.
In a mortar, place the salt and start crushing it with a wooden pestle, then add the toasted seeds and continue until you obtain a coarse and oily powder.
It keeps in the refrigerator for about 15 days. Alternatively, you can buy it ready-made; it is available in major supermarkets.
