Ingredients
- 10 tablespoons sesame seeds
- 1 tablespoon coarse sea salt (whole grain sea)
Preparation
It is a mix of whole sea salt and toasted and ground sesame seeds, which appears as a granular brown powder to be used in dishes instead of salt, ideal especially for those who suffer from hypertension.
Sesame seeds are rich in minerals, for instance, 100 grams of sesame seeds contain 975 mg of calcium and 629 mg of phosphorus. However, be careful as they are very caloric: 100 grams contain as much as 573 kcal!
It is a product especially suitable for cereal-based dishes, but it can also be used to season cooked vegetables, white meats, baked fish, salads, plain rice. If desired, it can be prepared at home.
The proportions between sesame seeds and sea salt can vary greatly: from 6 parts sesame seeds and one part salt to 30 parts sesame seeds and one part salt.
Ingredients:
10 tablespoons of sesame seeds
1 tablespoon of coarse whole sea salt
Place the sesame seeds in a sieve and rinse them under a stream of water.
Dry them. Spread the sesame seeds evenly on a baking sheet covered with parchment paper and roast at 212°F for about 15 minutes, being very careful not to burn the sesame as it would become bitter and toxic (reaction due to the release of sesamol). Let cool.
Place the salt in a mortar and start crushing it with a wooden pestle, then add the toasted seeds and continue until you get a coarse, oily powder.
It can be stored in the refrigerator for about 15 days. Alternatively, it can be purchased ready-made, found in major supermarkets.
