Preparation
Pimpinella is a plant typical of Mediterranean countries, found especially where the climate is mild and warm.
I often spend weekends in the Langhe countryside, and here it is easily found during the autumn, as it usually grows in November.
Perhaps better known by the name of Green Anise, it is recognized by its characteristic nut-like fragrance.
Tasting it, we can notice that the flavor resembles that of cucumber, with a slightly salty and pleasantly fresh aftertaste.
It also has antibacterial, expectorant properties and in tea helps to fight vomiting and nausea.
Very appreciated in cooking, it is usually a plant indicated especially as an addition to salads, but it is also ideal in soups, cooked vegetables, omelets.
In some cases, I have seen pimpinella pesto prepared, which is used to season pasta.
I find that its combination with eggs is truly exquisite.
