Whole Wheat Muesli Cookies

I love cookies, I enjoy making them with various ingredients. For these Whole Wheat Muesli Cookies, I wanted to try combining whole wheat flour, brown sugar, and muesli with fruit and flakes, a truly delicious combination. Of course, you must like strong and slightly rustic flavors.

  • Difficulty: Easy
  • Cost: Economical
  • Preparation time: 20 Minutes
  • Portions: 16 cookies
  • Cooking methods: Oven
  • Cuisine: Italian

Ingredients

  • 7 oz muesli with fruit and flakes
  • 1/2 cup brown sugar
  • 2 eggs
  • 3/4 cup whole wheat flour
  • 3.5 tbsp vegetable oil
  • 1 pinch fine salt
  • 1 tsp baking soda

Preparation

  • Put the eggs with the brown sugar in a bowl and beat them well with a whisk.

Now add a pinch of salt and the oil slowly while continuing to stir with the whisk.

  • At this point, pour in the muesli and mix the ingredients well with the whisk.

  • Finally, add the flour and baking soda. It is now advisable to mix with a wooden spoon as the mixture will be slightly stiff.

  • Now take a tablespoon of the mixture (about 1 oz) and place it on the baking tray covered with parchment paper. Use another spoon to help drop the mixture if it sticks.

  • Bake at 350°F for 15-20 minutes.

Suggestions/Tips

For a richer flavor, I wanted to use muesli with fruit and flakes.

With a 15-minute bake time, the cookies will be softer; at 20 minutes, they will be crunchier.
