For those who love game meat, wild boar has a robust taste and texture that I personally enjoy a lot. The wild boar stew is a classic that rarely disappoints.

Ingredients
- 2.2 lbs Wild Boar
- 4 cloves Garlic small
- 1 Onions
- 1 tbsp Chopped Bay Leaf
- 20 berries Juniper
- 10 Cloves
- 1 tbsp Mustard
- 4 tbsps Soy Sauce
- to taste Smoked Salt
- 3 tbsps Olive Oil
Preparation
In a large pan, sear the wild boar pieces with the oil over high heat on all sides.
Add the flavors, spices, finely chopped onion, and two glasses of warm water.
Cover and cook on low heat for about 2 hours, adding water when you see that the meat is drying out.
Tips/Advice
As a side dish, you can add large cut potatoes, which will be deliciously flavored together with the meat.
For this recipe, I used defrosted wild boar, so marinating before cooking isn’t necessary, as it has already tenderized in the freezer. If you use fresh wild boar, I recommend placing the pieces in a large container filled with water, to which you have added a halved squeezed lemon (also put the peels in), a few bay leaves, some juniper berries, and a few cloves. Let marinate overnight, then discard the water, rinse the meat, and proceed with cooking.
