Ingredients
- 2.2 lbs Wild Boar cut into pieces
- 3 Peppers Under Grape Pomace
- to taste Smoked Salt
- to taste Cloves
- to taste Coriander Seeds
- to taste Fine Salt
- 2 tbsps Olive Oil
- 1 Onions (about 50 grams)
- to taste Olive Oil
Preparation
Put a little oil in a large pan and brown the wild boar pieces on all sides.
Now clean the peppers under grape pomace from the seeds and, if you can, from the skin, and cut them into pieces.
In a large pan, put a little oil, add finely chopped onion and the peppers under grape pomace.
Cook for a few minutes.
Add the wild boar pieces, cloves, coriander, and smoked salt.
Mix to blend all ingredients.
Cover with a lid and cook for about two hours.
At the end of cooking, adjust the salt if necessary and let it dry by removing the lid if it’s too watery.

You can replace the peppers under grape pomace with fresh peppers adding a bit of vinegar: the taste won’t be the same, but it will get close to the original.
We usually don’t marinate the wild boar, as leaving it in the freezer for about a month removes the gamey smell.
