Wild Boar with Porcini Mushrooms

I really like game meat for its strong and bold flavor. I find Wild Boar with Porcini Mushrooms truly delicious!! The taste of the meat pairs well with this fragrant mushroom. If you like, you can also use other types of mushrooms, making the flavor slightly more delicate.

Ingredients

  • kg Wild Boar
  • 17.6 oz Porcini Mushrooms
  • to taste Smoked Salt
  • 1 tsp Marjoram (heaping)
  • 1 tsp Tarragon (heaping)
  • 1 tsp Thyme (heaping)
  • to taste Olive Oil

Preparation

  • Take a large pan, grease it with a little oil and add the wild boar cut into pieces (like stew).

    Season it with the herbs, smoked salt, and cook it covered for 1.5 hours over low heat.

    Add some water during cooking if you see it drying out too much.

    Stir it occasionally.

    After the cooking time, add the porcini mushrooms cut into cubes about 0.75 inches and cook for at least another 20 minutes.

    Serve hot.

Notes

As an alternative to porcini, you can also use other mushrooms, but it will lose a little in taste and aroma.

For this recipe, I used defrosted wild boar, so marinating before cooking is not necessary, as it has already been tenderized by the freezer. If you are using non-frozen boar, I recommend placing the pieces in a large container full of water, to which you have added a halved and squeezed lemon (put the peels in the container as well), a few bay leaves, some juniper berries, and a few cloves. Leave to marinate overnight, then discard the water, rinse the meat, and proceed with cooking.
