Ingredients
- 1 2/3 cups all-purpose flour
- 1/2 cup sugar
- 3 Eggs
- 1 container Plain natural yogurt (125 ml)
- 1 tbsp Olive oil
- 3 1/2 oz Peaches (canned)
- 1/2 cup peach juice
- 1 packet Baking powder (16 g)
- 1 pinch Salt
Preparation
Put the eggs and sugar in a mixer, add the vanilla essence, a pinch of salt, the oil, the peach juice, and continue mixing until the mixture is foamy.
Gradually add the flour with the baking powder, the yogurt, and mix well.
Spray a loaf pan measuring 10.5×4.5 inches with cooking spray, flour it, place half of the batter inside, add the canned peaches after draining the juice, and complete with the remaining batter.
Bake at 356°F (180°C) for about 50 minutes. Always perform the toothpick test.
Suggestions/Tips
I recommend draining the canned peaches to avoid leaving the batter too moist.
