I love Plumcakes, they are versatile, can be prepared with the ingredients you like the most, they are soft and easy to make. This Yogurt Plumcake with syrup-fruit salad is soft and tasty, the fruit makes it even more delicious.

Ingredients
- 2 eggs
- 1/2 cup g sugar
- 2 teaspoons vanilla extract
- 1/2 cup g plain yogurt
- 3 tbsps ml vegetable oil
- 2 cups g all-purpose flour
- 1 tbsp g baking powder
- 9 oz g fruit salad (drained weight)
- as needed all-purpose flour (to flour the syrup fruit)
- as needed candied cherries (to add to the batter and to decorate the plumcake)
- as needed powdered sugar (to sprinkle on the surface)
Steps
In the bowl of the food processor, put the eggs, sugar, vanilla extract, yogurt, oil, and mix for a few seconds. Alternatively, you can use a mixing bowl and a whisk.
Then add the flour, baking powder, and mix again.
Drain the syrup-fruit salad by putting it in a colander.
Pour it onto a plate and lightly flour it, this will prevent it from sinking to the bottom of the plumcake. To make it more delicious, I added some candied cherries, choose how many you like!
Incorporate the fruit into the batter and mix with a spatula.
Grease and flour a plumcake mold measuring 10.5×4 inches. Pour the batter inside, trying to level it.
Bake at 356°F for about 45-50 minutes. Always do the toothpick test, but remember that due to the fruit, it will always be a bit moist.
Tips and Advice
Flour the fruit to prevent it from depositing at the bottom of the plumcake.
To prevent it from drying out quickly, store it in a freezer bag.
