If you want to prepare a tasty and rather quick main dish, try cooking these Zucchini, Potato, and Ground Meat Burgers: with their explosive flavor, they will surely not disappoint you. Moreover, they are practical to prepare, as they are not baked in the oven but cooked in a pan!

Ingredients
- 500 g Trombetta zucchini
- 500 g Potatoes
- 4 Eggs
- 2 tablespoons Parmigiano Reggiano DOP (grated)
- 2 tablespoons Breadcrumbs (+ extra for breading)
- 2 leaves Basil
- to taste Fine salt
- to taste Black pepper (ground)
- to taste Olive oil
- 250 g Ground chicken meat
Preparation
Wash and clean the zucchinis. Wash and peel the potatoes. Grate both the potatoes and zucchinis using a mandoline or a large-holed grater.
In a large pan, add a little olive oil, then add the vegetables, salt, and pepper, and cook with the lid on for about 20 minutes, until cooked. Stir frequently to prevent sticking. Put them in a bowl and let them cool.
Add the eggs, Parmigiano (two heaping tablespoons), breadcrumbs, finely chopped basil, and ground meat. Adjust salt and pepper if necessary.
Mix the ingredients well; the mixture should not be too dry but rather moist. Shape into burgers about 100 grams each (I made 11). Pour plenty of breadcrumbs on a plate and bread the burgers well.
Add a little oil to a large pan (just to prevent sticking), arrange the burgers, and cook on one side for about 15 minutes on low heat with the lid on. Flip them and cook for another 15 minutes on the other side, still with the lid on. Check for doneness and, if ready, increase the heat to brown them.
