Linzer cookies, a sweet treat that awakens in me memories of youth when in the morning we would stop by the pastry shop before going to school to buy a snack. I attempted to make them after I had some leftover shortcrust pastry. Indeed, after making the jam tart, I had quite a bit of shortcrust pastry left, and in a few simple steps, I made these delicious cookies with homemade plum jam! Ingredients
- 2 1/2 cups all-purpose flour
- 1 cup sugar
- 2 eggs
- 7 tbsps butter
- 1 packet vanillin
- 1 pinch salt
- 10 oz plum jam
Steps
Roll out the shortcrust pastry to about 1/4 inch thick and use a cookie cutter to cut out circles, making sure to cut an even number. Now, spread plum jam on half of the circles, and for the remaining circles, find something with a smaller diameter to create a central hole; I used a glass. Cover the jam-covered circles with the holed ones and place them on a baking sheet lined with parchment paper. Bake for 15 – 20 minutes, until golden on top. Once cooked, let them cool and dust with powdered sugar. Now, enjoy them, perhaps with a nice cup of tea!
