Ingredients
- 3 potatoes
- A few sprays extra virgin olive oil
- to taste roast seasoning
- to taste salt

- Mandoline
- Air Fryers
- Parchment Paper

Steps
Peel the potatoes.
Slice them with a mandoline (thickness about 1/8 inch). They need to be flexible enough to roll without breaking.Soak them in cold water for at least 10 minutes. This helps to remove the starch and get crispier chips.
Drain and dry the slices very well with absorbent paper or a clean cloth.
Gently roll each potato slice onto itself forming a kind of “cannoli” or cone.
Secure each roll with a toothpick to hold the shape during cooking, then place them in the basket of the air fryer, preferably lined with perforated parchment paper.
Lightly spray with oil, salt, and sprinkle with herbs or spices as desired.
Cook in the air fryer at 320°F for 10 minutes, checking halfway through.
Once they are golden brown and crispy, they are ready! If they still seem a bit soft, extend cooking by a few minutes, checking often.
