Peel the potatoes and cut them into regular wedges.
Parboil them in salted water for 10 minutes until slightly tender but not fully cooked.Drain them, place them in a bowl, and season with oil, salt, and roasting herbs.
Place the ham shank in a lightly greased baking dish. Add the seasoned potatoes around it. Sprinkle with dried parsley and bake in a static oven at 350 °F for 35–40 minutes, turning the shank halfway through.
For perfect browning, activate the grill in the last 5 minutes.
