Ingredients

  • 14 oz penne rigate
  • 2 1/2 cups pumpkin (diced and cleaned)
  • 1 tbsp extra virgin olive oil
  • to taste salt
  • 2 cups béchamel sauce
  • 3 1/2 oz sweet bacon (cubed)
  • 1 mozzarella
  • 3 1/2 oz grated Parmesan cheese

Steps

  • In a pan, heat a tablespoon of extra virgin olive oil and add the pumpkin cubes. Salt, stir, and cook for about 10 minutes. If necessary, add a little water.

    Once cooked, blend the pumpkin with a hand blender until you get a cream. Add the béchamel sauce (you can use store-bought or make it yourself with my easy recipe found HERE). Mix well and set aside.

  • In the meantime, cook the penne rigate or other short pasta in plenty of salted water until half-cooked (about half the time indicated on the package). Drain them and put them in a large bowl or in the pot.

    Add the pumpkin cream and mix. Add the diced mozzarella and the sweet bacon and continue stirring with a wooden spoon or spatula.

    At this point, sprinkle the grated Parmesan cheese, leaving some to sprinkle on top of the baking dish.

  • Mix and pour the pasta into a baking dish or a baking tray. Sprinkle the remaining Parmesan and bake.

    Cook at 350°F for about 30 minutes, then brown the surface for 5 minutes using the grill function.

    Remove from the oven and let rest for 5 minutes before serving.

Storage and Tips …

Store covered with aluminum foil and heat before serving.
