Ingredients

  • 1 cabbage (small)
  • 3 potatoes
  • 1 carrot
  • 1/4 onion
  • 1 broth cube (vegetable)
  • 1 stalk celery
  • 3 tablespoons extra virgin olive oil
  • to taste black pepper
  • to taste parsley
  • Half teaspoon tomato paste
  • 7 oz spaghetti (broken)

Steps

  • Let’s prepare the vegetables

    Wash the cabbage, remove the outer leaves, and cut it into thin strips.

  • Peel the potatoes and carrots, wash them, and cut them into cubes.

  • Finely chop the onion and cut the celery into pieces.

  • Let’s prepare the soup

    In a large pot, heat the extra virgin olive oil over medium heat. Add the chopped onion and let it sauté until it becomes translucent.

  • Add the potatoes, carrots, and celery, stir, and let them flavor for 2/3 minutes.

  • Add the cabbage and tomato paste, stir, and let them wilt for a few minutes.

  • At this point, pour enough water into the pot to cover the ingredients, add the broth cube, and bring to a boil.

  • Lower the heat and let it cook on low heat until the vegetables are tender.

  • In the meantime, cook the broken spaghetti separately until AL DENTE.

  • Once ready, add them to our soup and continue cooking for 2 minutes. Adjust salt and black pepper according to your taste, sprinkle with chopped parsley, and serve hot.
