Cake with Carrots, Almonds, and Chocolate

The cake with carrots, almonds, and chocolate is a delicious dessert made with fresh carrots, suitable for both breakfast and snack.

The addition of almond flour and dark chocolate makes this dessert indulgent yet different from classic homemade cakes.

Serve it with a glass of fruit juice or orange juice to please both adults and children.

If you prefer, you can substitute the dark chocolate chips with milk chocolate chips.

To prepare the batter, I used the Bimby, but a regular blender or food processor will achieve the same result.

Ingredients

  • 1 3/4 cups carrots
  • 1 1/2 cups flour
  • 1 cup almond flour
  • 4 tbsp butter
  • 3 eggs
  • 2/3 cup sugar
  • 1/4 cup dark chocolate chips
  • 1 packet baking powder
  • as needed butter (for the pan)
  • as needed flour (for the pan)

  • Blender
  • Springform Pans 22 cm
  • Vegetable Peeler
  • Knife
  • Cutting Board
  • Juicer

Steps

  • You can use the Bimby or put all the ingredients in a blender!

  • Preheat the oven to 350°F.

    Peel the carrots, remove the top, and with the help of a knife and cutting board, cut them into pieces, place them in the blender, and chop them for 30 seconds.

  • Gather at the bottom with a spatula and add the almond flour, the eggs, the softened butter in pieces, the sugar and blend for 1 minute.

    Add the flour and the baking powder and mix for 1 minute.

    Add the dark chocolate chips and mix with a wooden spoon.

  • Butter and flour a 22 cm pan.

    Pour the mixture into it and bake for about 30 minutes at 350°F, always performing the toothpick test before taking it out of the oven.

    Let it cool, remove from the pan, and decorate with powdered sugar.

Storage and Tips…

Store covered with a cake cover.

Consume within 3 days.
